Love this creamy corn salad.. It’s so quick and easy to make
1 cup @harvestime_sa sweet corn
1 cup harvestime Diced carrots
1 cup harvestime green peas
½ red onion chopped
½ cup cucumber
¼ cup mayonnaise
¼ cup sweet chilli sauce
Salt and pepper
You can add avocado or cherry tomatoes
Place a large pot on a medium heat, add vegetables and 4 cups of water. Cover the pot and boil/steam for 5 minutes or till they tender.
Remove the post from the heat, drain the excess water and let the vegetables cool
Meanwhile chop onions, red onions, basil
Now combine all the ingredients
Refrigerate the salad
This salad keeps well for 3 to 4 days in the fridge, covered.
